Ingredients
- One bundle kale
- Chicken Breasts
- Croutons
- Parmesan cheese
- Newman’s Own Caesar Vinaigrette
- Ceasar dressing
Preparation
The Night Before: Place chicken breasts into Ziploc bag with Newman’s Own Caesar Vinaigrette (1 Cup per beast). Let marinate overnight or for minimum 5-8 hours.
PRO TIP! Buy the family pack chicken breast to save you money. You can put the breast into separate Ziploc bags with the vinaigrette in each before putting in the freezer. That way you have pre-marinated chicken for when you need it on a dime.
Salad Dressing (can also be made night before): In a mason jar put following ingredients and shake well:
- 3 Tbsp mayonnaise
- 2 Tbsp lemon juice
- 1 Tbsp water
- ½ Tbsp Dijon mustard
- ½ tsp miso paste
- 6 glugs Worcestershire sauce
- Ground pepper to taste.
Chicken: Put 2 Tbsp oil in pan and heat on medium-high. Test pan by splashing water to see if it sizzles. Once hot, cook chicken for 15-20 minutes, or until fully cooked. Feel free to add leftover marinade from Ziploc to the pan in order to give chicken extra glaze while cooking!
…While chicken is cooking assemble your caesar salad…
Wash & dry kale 1 full bundle of kale. Pull leaves off of stems and place in bowl. Massage kale for 2-3 minutes – you should start smell a fresh “grassy” aroma. Add croutons, parmesan cheese and Caesar dressing. Toss well.
PRO TIP! Use this time to also assemble your lunch meals! Put extra kale, croutons, and cheese into Tupperware containers. Leave dressing off and bring in small jar or container to toss the next day.
Once chicken is cooked take off heat and cut into strips. Serve on salad & enjoy!
