Ingredients:
  • 1 1/2 C uncooked rice
  • 2 Ahi tuna steaks
  • lettuce
  • cucumber
  • radishes
  • avocado
  • green onion
  • cilantro
  • pickled ginger
  • 4 Tbsp teriyaki sauce
  • 2 Tbsp rice vinegar
  • 3 Tbsp mayo
  • 1 Tbsp sriracha
Preparation

Cook Rice: add 1 1/2 C uncooked rice to 3 C water. Bring to a boil and let stand for 2 minutes. Bring temperature down to simmer and let rice book with lid on. Once finished take off heat and add rice vinegar. Stir until rice vintager is mixed evenly.

Marinade Tuna: cut tuna steaks into 1″ cubes and place in bowl with chopped green onion and teriyaki sauce. Allow tuna to marinade while rice is cooking.

Prepare Veggies: cut lettuce into small-ish pieces, cut cilantro, slice cucumber, radishes and avocado. Feel free to add any other veggies that you would like on top. d

Pro Tip: if you plan on leaving the avocado out for a while, soak avocado in a water-lemon juice bath to avoid oxidisation. 

Sriracha-May Sauce: add both mayo and sriracha in a small mason jar and shake well.

Assemble: place lettuce in the bottom of bowl and add a scoop of rice on top. Pour teriyaki sauce over rice and lettuce. Add veggies, tuna, and pickled ginger. Finish by drizzling sriracha-mayo sauce over bowl.
