Let’s face it, school is stressful, exhausting, and expensive. PERIOD. After a long day of sitting in classes, reading textbooks, and writing assignments, the last thing I want to do is stop by the grocery store to make myself dinner. Most of the time I give up and end up ordering sushi, or stopping by Red Barn for one of their custom sandwiches (definitely go if you haven’t tried them already!). But, with my limited income and minimal student loan I know that’s a habit I can’t keep up.

Over the next three months I plan to try out new easy-to-make recipes while also keeping in mind the total cost of each meal. I’ll let you know the overall cooking time, the number of meals each recipe produces and a breakdown of the total cost vs. cost per meal. Then, I’ll score each recipe based on a three-point rating scale in the following categories:

  1. Flavour Profile: is it delicious or just a “meh”?
  2. Pack-ability: how easy is it to bring in a backpack?
  3. Healthy Choice: am I getting all my fruits and veggies or is this a total cheat day?
