This maybe isn’t the cheapest meal, but it’s easy and damn delicious!

Ingredients:
- 1 kg Pork Tenderloin
- 1 package Hot Italian Sausage (3-5 sausages)
- 340ml jar sliced artichoke hearts
- 210ml jar sundried tomatoes
- 2 handfuls of baby potatoes
- 1 White Onion
- 2 Bell Peppers (try different colours for a brighter looking meal!)
- 2 big handfuls of baby potatoes
- Spices: dried oregano, thyme, and basil, salt & pepper to taste
Preparation
The Night Before: Cut pork tenderloin into 2-inch sections, then cut sausages, potatoes and onion into chucks and add everything into crockpot. (Start with only 3 sausages and see how much room you have in your pot before adding all 5). Add full jar of artichoke hearts and sundried tomatoes, along with ½ jar of the “juices” from each jar. Add seasoning to taste. Put in fridge and leave for the next day.
The Next Morning: Before going to school, (preferably around 10:30am) put slow cooker on low heat and leave for 8 hours. About 6 hours in, cut bell peppers into large chunks and add to pot. Take off heat when meat is fully cooked through.
